Guacamole

Ingredients:

• 4 ripe avocados, chopped into cubes
• 1 and 1/2 cups chopped onion
• 1 and 1/2 cups chopped tomato
• 1 chopped jalapeno
• 10 tablespoon fresh cilantro
• 4 tablespoon lime juice
• 4 tablespoon olive oil
• salt & pepper

Directions:

Mix all the ingredients together in a large bowl. Mash with a fork or potato masher until the avocados are a fine paste and all ingredients are adequately mixed. Refrigerate if necessary.

Greek Salad

Ingredients:

• 4 tablespoons red wine vinegar
• salt & pepper
• 2/3 cup olive oil
• 4 medium sized tomatoes, chopped into cubes
• 4 cucumbers, peeled and sliced
• 1 and 1/3 cups feta cheese, crumbled
• 1 cup sliced red onion
• 8 small calamato onions, cut thin

Directions:

In a bowl, mix together the vinegar, salt, and pepper. Add the olive oil and continue to mix.
Add the vegetables and toss. Make sure the dressing is well mixed. Serve immediately.


Lemon Roast Chicken

Ingredients:

• 2 chickens, cut into fourths
• 1 teaspoon oregano
• 1/2 teaspoon garlic powder
• 1/2 cup butter (1 stick)
• salt and pepper
• lemon juice (12-16 tablespoons or 4 lemons)

Directions:

Heat the oven to 400 degrees Fahrenheit.
Sprinkle the chicken with the oregano and garlic powder.
Melt the butter in a pan and add the chicken.
Season lightly with salt and pepper.
Place chicken in the oven, skin facing up. Cook for thirty minutes.
Turn chicken over and cook for another 30 minutes until the skin is brown.
Turn the oven down to 300 degrees and let chicken sit until tender.
Add lemon juice.
Cover the chicken and turn off the oven. Let it sit for 15 minutes.
Serves 8.


Eggs Benedict with Spinach

Ingredients:

• 4 pieces Canadian bacon
• 2 cups spinach
• 4 poached eggs (see below)
• 1/4 cup hollandaise (see below)

Poached Eggs

Ingredients:
• 4 eggs
• 1 tablespoon white vinegar
• 1 teaspoon salt

Directions:

Boil an inch of water in a large skillet.
Once the water boils, add salt and vinegar and lower the heat. Let the mixture simmer.
Break the eggs into a bowl without breaking the yolks. Slip them into the water.
Cook each egg for 2-3 minutes or until the whites harden.
Remove from water with a spoon.

Hollandaise Sauce

Ingredients:

• 1/3 cup butter
• 2 egg yolks
• 1 tablespoon lemon juice
• salt
• cayenne
• nutmeg (optional)

Directions:

At low heat, melt the butter in a pan.
Combine the rest of the ingredients in a blender or food processor.
Slowly pour the butter in and blend until the sauce is thick.

Eggs Benedict

Directions:

Heat a pan and cook the bacon, 2 minutes for each side.
Divide the spinach onto plate and put a piece of bacon on top.
Add one egg and hollandaise sauce.
Ready to eat. Serves 2.
